We use gooseneck kettles for two reasons, they are lightweight and allow for a slow, controlled pour-over. Slow pour-over makes pour-over coffee much easier, as even saturation of the coffee grounds is essential for extraction.
Temperature Control:
Some higher-end gooseneck kettles come with temperature control settings on their bases, allowing you to heat the water to a specific temperature based on different types of brews. While some regular plug-in kettles offer temperature control, this is usually a preset temperature that cannot be customized. You will find that gooseneck kettles generally have greater temperature accuracy.
